Summer recipe: Quick and easy fruit ice pops by Avoca

With temperatures increasing there’s nothing better than cold ice pops in the sun. Try these easy and refreshing recipes that are full of flavour

Ice lolly in hand and the sun on our skin, finally it feels like summer is here. Whether your having a BBQ or a picnic, impress your family and friends with these ice lollies that taste as good as they look. If you want to try something different and you’ve had your fair amount of iced coffees, here are three lolly recipes from Avoca that will not only cool you down but will also boost your vitamin C intake. From mint to coconut and banana, don’t be afraid to mix it up and make these quick and easy recipes your own. 

Try  Avoca’s three recipes down below:

Makes 6-8, depending on size of moulds

Ingredients:

Strawberry & Banana:

1 punnet strawberries, hulled

2 bananas, sliced

½ lime, juiced

Mango & Coconut:

2 mangoes, peeled & chopped

1 banana, sliced

½ lime, juiced

Coconut flakes, toasted

Pineapple, Kiwi & Mint:

½ pineapple, peeled & chopped

3 kiwis, peeled & chopped

5 mint leaves

2 tsp honey

 

Method:

  1. Add the fruit to a blender & add a little water to help blend together. Mix until smooth but still with a little texture. Add honey (optional).
  2. Garnish the moulds with fruit slices or coconut flakes to make a decorative design. Pour the fruit puree over. 
  3. Add the stick & freeze overnight.
  4. Remove from the mould & serve immediately. You can use any fruit combinations, be creative & have fun!
