Recipe: Easy French Toast with summer berries

Some mornings just call for something a little bit extra

This gorgeous and very simple French Toast recipe from chef Kevin Dundon is perfect for turning an ordinary breakfast into something special.

Ingredients

4 slices sourdough bread day old
2 large eggs
100 ml milk
50g caster sugar
3 tbsp butter
200g strawberries
4 tbsp raspberry coulis
4 tbsp mascarpone cheese (optional)
Icing sugar to serve

Method

  • In a bowl, whisk together the eggs and milk and sugar.
  • Heat a non-stick pan over a low to medium heat and add the butter.
  • Quickly toss the bread slices in the egg mixture and use your hands to shake off excess egg mixture.
  • Carefully place the bread in the pan and sauté them about 1 minute on each side over lower heat. (About 2 minutes in total).
  • Remove the coloured bread from the pan into the serving platter.
  • Scatter the fresh strawberries, raspberry coulis, and mascarpone cheese.
  • Add a squeeze of lemon juice and some icing sugar and serve immediately.
