Recipe: Protein breakfast berry crumble

This nutritious and quick recipe is a great way to start the day

Ready in just 25 minutes, this tasty breakfast recipe from Linwoods features a warm, fruity berry base, topped with a crumbly, protein-packed topping that’s sure to satisfy.

Preparation Time – 10 minutes

Serves – 2

Ingredients

For the base

300g frozen berries
1 tbsp cornstarch
1 tbsp raspberry/strawberry/blueberry jam

For the crumble

30g vegan protein (a blend, soy or pea protein, vanilla flavour works well)*
60g jumbo oats
2 tbsp Linwoods Milled Flaxseed
30 – 45g almond, peanut or cashew butter
60ml oat or almond or cashew milk
1 tbsp maple syrup**

Method

  • Preheat your oven to 180C (350F).
  • Mix together the berries, cornstarch and jam of choice in a large bowl. Set to one side.
  • Mix together the protein, oats and flaxseed in a separate bowl. 
  • Add the milk, maple syrup and nut butter to the oat mixture. Mix well to combine.
  • Divide the berry mixture between two oven-safe bowls/ramekins.
  • Divide the crumble topping in two and place on top of the berry mixture in the oven-safe dishes.
  • Bake for 15 minutes in the preheated oven. Allow to cool for 5 minutes before serving and top with plain yoghurt of choice.

*You can replace this with 30g of oat, buckwheat or plain flour 
**You may want to use 2 tbsp of maple syrup if you use flour or an unflavoured/unsweetened protein powder.
