Tacos with prawns & avocado salsa

These simple tacos with spicy prawns and a fresh avocado salsa makes an incredibly quick dinner that feels like a treat. But it’s actually a pretty light dish that is packed with healthy ingredients.

If your idea of Mexican night at home usually means cheesy enchiladas or a towering pile of nachos, you may not consider it the healthiest choice. But this handy taco recipe, made with wholewheat tacos, isn’t too stodgy and still has all the flavours a Mexican feast should have — avocado, spicy jalapeno and prawns with a kick.

Prawn Tacos with Avocado Salsa

Serves 4

Ingredients:

For the salsa:

  • 1 small onion, diced
  • 1 jalapeno pepper, thinly sliced (optional)
  • 2 garlic cloves, peeled and minced 1 tomato, seeded and chopped
  • 1 avocado, peeled, de-stoned and roughly chopped
  • 3/4 tsp salt
  • 1 tbsp fresh lime juice, from half a lime
  • a handful of fresh coriander leaves, coarsely chopped

For the prawns:

  • 1 tsp olive oil
  • 1 1/2 tsp chilli powder
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 454g large or extra large prawns, peeled and de-veined

For the tacos:

  • 8 whole-wheat taco shells
  • salad leaves
  • 2 limes, cut into wedges, for garnish
  • 120g reduced fat creme fraiche

Method:

For the salsa:

Blitz the onion, jalapeno and garlic in a food processor until at your desired consistency. Add to a bowl with chopped tomatoes, avocado, salt, lime juice and coriander leaves and mix well. Set aside.

For the prawns:

Spritz a pan with low cal spray oil over a medium heat. Mix the olive oil, chili powder, salt, cayenne pepper and shrimp in a large bowl until evenly coated. Cook until just opaque, about 1 – 2 minutes per side. Cover to keep the prawns warm.

To serve:

Heat the taco shells in the oven until warm. Fill each taco with the salsa, salad leaves, prawn and top with a spoon of reduced fat cre`me fraiche.

Serve tacos with lime wedges on the side with a leafy green salad.
