This recipe from Baileys embraces next-level indulgence that you can make yourself whenever you feel like a decadent treat!

Ingredients

For the casing

  • 40g White chocolate
  • 250g Milk chocolate

For the filling

  • 25-35g Kataifi pastry (depending on how gooey you want the filling to be)
  • 10ml Vegetable oil
  • 30g Pistachio paste
  • 30g Tahini
  • 25-50ml Baileys Original Irish Cream (again this can be adjusted to taste and texture)
  • 10g chopped pistachio

Equipment

Chocolate bar moulds

Method

  • Toast your Kataifi in a pan with oil until it is golden brown. Remove from the pan once cooked and set aside to cool.
  • Heat your white chocolate on a double boiler or in the microwave. Once the chocolate is melted, drizzle into your moulds using a spoon, making any playful designs you want, and pop it in the fridge for 5-10 minutes until the chocolate has set.
  • Now heat your milk chocolate on a double boiler or in the microwave. Pour your milk chocolate into your prepared moulds and swirl it around so it coats all sides and tip out any excess chocolate back into the boil. Clear any chocolate that has spilled on the edges of the moulds and place in the fridge to set.
  • While the chocolate is setting, it’s time to make your filling. Combine the pistachio paste, chopped pistachios and the tahini and stir with a spatula until well mixed. Then mix in the Baileys and the Kataifi pastry.
  • Take your moulds out of the fridge and fill with the pistachio mixtures. Now, drizzle some more milk chocolate on top of the pistachio and smooth out with a spatula.
  • Put back in the fridge to set, and once ready, break open to see that gorgeous green filling ooze out. Enjoy!

If you don’t have the ingredients you need, or would rather pick up a ready-made version of this delectable treat, Irish chocolatier and sweet shop Sugar Plum Sweetery – based in Mullingar, Co Westmeath – has whipped up a fantastic version that has been a huge hit with customers around the country (pictured above). As well as its Willy Wonka-esque shop, you can find its creations in Avoca, Brown Thomas and Arnotts. Team Irish Country Magazine gave the viral bars the taste test recently and we can confirm, they are a delectable combination of smooth chocolate and crunchy filling, with subtle nuttiness from the pistachio cream. Top tip: keep it in the fridge first!
