Recipe: Gluten free cookie dough energy balls

It’s all too easy to reach for the biscuit tin when you’re feeling peckish. Having these tasty energy balls to hand will quell your cravings and keep you going until your next meal

If you’re incapable of having a cup of tea or coffee without a treat, it’s a good idea to have a snack alternative that will satisfy your sweet tooth without sending your glucose levels through the roof.

These energy balls, made with Flahavan’s Gluten Free Jumbo Oat Flakes are perfect to leave in the fridge for when that 3pm slump hits!

Serves: 10

Prep time: 20 minutes

Ingredients:

130g Flahavan’s Gluten Free Jumbo Oats
130g cashew nuts
1 scoop vanilla protein powder
Pinch of salt
¼ cup agave syrup
¼ cup melted coconut oil
170g cashew butter
60g chopped dark chocolate

Method:

  • Place all the ingredients, except the chocolate, into a food processor and blend until the mixture comes together. If you don’t have this appliance, put them all in a bowl and mix well.
  • Knead the chopped chocolate into the mixture, wrap in cling film and chill in the fridge for 10 minutes.
  • Once chilled, separate the mixture and roll into walnut sized balls and store in an airtight container.
