Quick meal prep: chicken cannellini bean soup

If you need a nourishing meal with veggies, protein and flavour in a flash, try this delicious soup recipe with lots of health benefits.

Have you embraced the bone broth trend? More than just a fad, this wholesome ingredient is not just another word for stock. You’ve probably heard that bone broth is good for you, but perhaps are less aware of the reasons why.

Bone broth is slow cooked for hours to extract all the gelatin from the bones. Gelatin is soothing on the digestive tract, making it a healthy option for sufferers of IBS and food allergies. Gelatin also helps increase collagen production in the body, which helps improve skin health.

Other nutrients found in bone broth include glucosamine, chondroitin and glycine. Glucosamine is known to provide relief for inflammation-related health conditions like arthritis or osteoporosis. Chondroitin can help prevent cartilage breakdown in the body, so also benefits patients with osteoarthritis. And for everyone, the amino acid glycine in bone broth helps aid restful sleep which naturally can help boost your mood.

This recipe using Sadie’s Kitchen Comforting Chicken Bone Broth is quick to put together and also contains beans which are an added source of protein, rosemary which has antioxidants and cauliflower which provides vitamins C and K, as well as fibre which benefits digestion.

Ingredients:

1 medium cauliflower

30g butter

2 sprigs of rosemary

1 can of cannellini beans

50mls double cream

2 packs of Sadie’s Kitchen Comforting Chicken Bone Broth

Sea salt and pepper to taste

Method:

  • Add the chopped cauliflower and rosemary to a pot and gently cook in the butter, over a medium heat for 5 minutes.
  • Pour in two packs of Sadie’s Kitchen, cover and bring to a simmer for 15 minutes.
  • Blitz the soup with a stick blender until smooth then add the cannellini beans and double cream.
  • Season to taste with sea salt and pepper and serve with a sprinkle of fresh rosemary.
