Take the ‘feta fried egg taco’ trend to new heights with these tasty ideas

Fancy something simple in the morning? This crafty TikTok recipe for a 5-minute breakfast has just got a sophisticated makeover

The 5-min feta fried egg taco trend by @graceelkus took TikTok by storm earlier this year, gaining 13.7m views in less than a month. On her profile, she offers various versions of the recipe, including one that is drizzled with chilli oil and another that uses pesto.

For the original, simply crumble feta around the edge of a preheated pan, crack an egg in the middle and cover until the egg white is set and then serve on a tortilla and fold into a taco. It’s that easy!

HelloFresh Ireland’s Head of Culinary, Hannah Duxbury comments:

“This feta-egg taco is the ultimate quick recipe for breakfast! Speedy, delicious, and perfect for busy mornings. TikTok really is great for finding inspiration for recipes to try at home. It’s amazing how such a simple idea can become a new flavourful and nutritious favourite.

Hannah and her team put their heads together and came up with four twists on Grace Elkus’ 5-minute feta fried egg trend:

Mediterranean Fusion

Infuse the taco with a breakfast Mediterranean recipe by crumbling some tangy Kalamata olives and sun-dried tomatoes onto the feta before adding the egg. The olives bring a briny richness, while the sun-dried tomatoes provide a sweet and savoury depth that harmonises perfectly with the creamy feta.

Zesty Avocado Drizzle

Whisk together ripe avocado, a handful of fresh coriander, a squeeze of lime juice, a touch of minced garlic, a dollop of Greek yoghurt or sour cream, and a pinch of salt and pepper. Blend until creamy and drizzle this zesty cream mix over your folded taco for a tangy, herby kick that perfectly complements the feta and egg. 

Mexican Morning Toast

Spread a layer of creamy refried beans on a slice of toasted sourdough. Top with the feta and fried egg combination. Enhance the flavours with sliced avocado, pickled red onions, and a sprinkle of crumbled fresh cheese. Finish with a drizzle of salsa verde for an extra Mexican twist.

Rustic Potato Hash

Prepare a rustic potato hash by sautéing diced potatoes with onions and bell peppers until golden and crispy. Layer the feta and fried egg mixture over the hash. Garnish with chopped fresh herbs like thyme or rosemary and a drizzle of truffle oil for an earthy, aromatic touch.
