Let us introduce you to Wild Churn, bringing Italy to Salthill.

Founded by Ronan Galvin, Wild Churn is an artisan gelato company serving small-batch, handcrafted gelato from their store in Galway’s Salthill. Their Gelato blends traditional Italian methods with high-quality, locally sourced Irish dairy.

We catch up with Ronan to chat all things gelato.

Many Irish people have grown up with traditional dairy ice cream. What are the key differences in taste and texture that make your authentic Italian-style gelato stand out from the others?

Our gelato has a lower fat content and a more intense flavor profile compared to traditional Irish dairy ice cream. Its texture is also softer, allowing it to melt faster on the tongue.

How does Wild Churn add to the city of Galway’s famous food culture?

Wild Churn complements Galway’s vibrant, artisanal, and independent food scene. We proudly use milk and cream produced in the West of Ireland, alongside select local ingredients like Foods of Athenry granola, Achill Island Sea Salt, and Micil Irish Cream.

As Wild Churn use traditional Italian techniques for every batch. How does being rooted in Galway make your product uniquely Irish?

The uniqueness comes from the fusion of authentic Italian methods with local Irish ingredients. Additionally, by sourcing and producing locally, we significantly reduce the carbon footprint associated with importing and storing our gelato.

Gelato is often seen as a summer treat. How does your autumn collection prove that it can be comforting all year round?

Gelato is becoming much less seasonal each year. To prove it can be a year-round comfort, our upcoming autumn collection will feature cozy flavors such as Apple Strudel, Cinnamon Swirl, and Plum and Orange Sorbet.

You’ve mentioned that your brand is inspired by the energy of Salthill and the Atlantic coastline. In what way do these locations inspire the flavours you serve?

The coastal energy and the refreshing time out that people enjoy in Salthill are central inspirations for our brand. The Wild Churn concept was actually born at The Creamery Cafe, located midway along the Wild Atlantic Way, which naturally infuses that coastal spirit into everything we do.

What’s something important that you want people to remember after they’ve had their first scoop?

We want people to remember the experience of enjoying a true-to-flavor gelato crafted from locally sourced ingredients, alongside the smooth, velvety texture that only premium quality gelato can provide.
