Recipe: replace your Hugo Spritz with this Irish Whiskey and Elderflower Collins

How to make the perfect Irish Whiskey and Elderflower Collins at home with Yeats Irish Whiskey.

If you’re sick of Hugo Spritz by now, Irish whiskey is getting a light and refreshing makeover with the Innisfree Elderflower Collins. It’s an elegant cocktail combining premium Irish whiskey, elderflower, fresh lemon and sparkling soda water.

The serve has been created to complement Yeats Irish Whiskey, inspired by the life, landscape and literary legacy of W.B. Yeats.

Conceived in County Sligo and distilled in Ireland, the whiskey combines smooth vanilla and honey notes with red berry flavours from its Ruby Port cask finish. The result is a beautifully balanced base for a refreshing summer cocktail.

The Innisfree Elderflower Collins

Serves one

Ingredients

  • 45ml Yeats Irish Whiskey
  • 15ml elderflower liqueur
  • 20ml freshly squeezed lemon juice
  • 75–100ml chilled soda water
  • Ice
  • Fresh mint, a lemon wheel and seasonal berries to garnish

Method

Fill a highball or large wine glass with ice. Add the Yeats Irish Whiskey, elderflower liqueur and freshly squeezed lemon juice.

Stir gently to combine before topping with chilled soda water. Garnish with fresh mint, a lemon wheel and a blackberry or raspberry.

For a slightly sweeter serve, add 5–10ml sugar syrup before topping with soda water.

A Summer Serve with Irish Soul

Bright, floral and gently sparkling, the Innisfree Elderflower Collins offers a refreshing alternative to the traditional spritz. The elderflower and lemon lift the whiskey’s fruit and vanilla notes, while the soda water creates a lighter, longer drink that is ideal for garden gatherings, summer lunches and evenings outdoors.

Yeats Irish Whiskey can also be enjoyed neat, over ice, with a few drops of water or simply topped with premium soda water and garnished with lemon.

An Award-Winning Irish Whiskey

The Lake Isle of Innisfree is the first release from a new Irish whiskey brand rooted in poetry, place and craft. Just 4,000 individually numbered bottles are available worldwide.

The inaugural expression has already received international recognition, earning a Gold Medal at the 2026 San Francisco World Spirits Competition.

The carefully composed blend comprises:

  • 90% aged Irish grain whiskey, matured primarily in first-fill ex-Bourbon American oak casks
  • 9% triple-distilled Irish malt whiskey, finished in Ruby Port casks
  • 1% peated malt, adding subtle depth and structure

The components were matured separately for between five and seven years before blending. The Ruby Port cask finish introduces red fruit, warmth and texture, while the ex-Bourbon casks bring notes of vanilla, honey and toasted oak.

Tasting Notes

Nose: Vanilla, honey and toasted oak, lifted by gentle red berry notes.

Palate: Smooth and rounded, with dark fruit and subtle wine sweetness balanced by soft spice.

Finish: Medium in length, with lingering sweetness and warmth.
