Recipe: Irish strawberry ice lollies with a twist

When you don’t feel like a heavy dessert, these lollies make the perfect sweet treat

The twist: A sprinkle of sweet chilli powder Tajín adds a bit of sunshine to your lolly.

Serve 4 – depending on your moulds.

Ingredients:

600g strawberries, hulled and cut in quarters

150g sugar

120 ml. water

½ lime, juiced

Tajín, to taste

Method:

  • Mix the strawberries with the sugar in a bowl and leave for an hour. The strawberries should release their natural juices.
  • Place the strawberry and sugar mix in a pan and bring to a boil and then simmer until strawberries are soft, about 5 minutes. Leave to cool.
  • Blend the mix with the lime juice. Divide the mixture into ice lolly moulds, snap on lid and place the sticks. Freeze until solid for about 4-5 hours.
  • Remove the ice lollies from the mould and sprinkle them with Tajín.
