Recipe: Chicken Risotto

What could be nicer than a big serving of this delicious and filling recipe for dinner after a long day?

If you love the thought of risotto but have never got around to making it at home, give this one by Knorr a try – you won’t be disappointed.

Serves 4

Ingredients:

1 Knorr White Wine Stock Pot

250g chicken breast

1 tbsp olive oil

1 medium onion, finely chopped

2 garlic cloves, crushed

500 ml water

250g arborio rice

100g peas

50g grated Parmesan

Chopped parsley, to serve

Method:

  • Dissolve 1 Knorr White Wine Stock Pot into 500ml water.
  • Heat the olive oil in a large saucepan and add the onion and garlic. Cook on gentle heat for 8-10 minutes, stirring regularly until the vegetables soften but do not brown.
  • Add 250g chicken breast chunks and fry for a few minutes.
  • Pour in 250g arborio rice and stir until coated in oil.
  • Add in a ladleful of the stock and stir until the stock has been absorbed.
  • Gradually add more stock until all the stock has been used.
  • Add 100g peas and 50g grated Parmesan and stir in well. Garnish with chopped parsley to serve.
