Recipe: Roasted potatoes with lemon and feta

This Greek-inspired side dish comes together in a flash and is sure to be a favourite with your friends and family

Ingredients

1kg Baby Irish potatoes
4g Mint
20g Crushed garlic
4g Sea salt
2g Cracked black pepper
2g Dried oregano
32ml Irish rapeseed oil
100g Greek feta cheese
8g Lemon zest
6g Flat parsley
2g Turmeric

Method

  • Combine garlic puree, turmeric, rapeseed oil, salt, pepper and dried oregano.
  • Add baby potatoes and mix together, making sure to fully cover.
  • Place in a pre heated oven at 190 degrees for 30 mins until golden brown and cooked through.
  • Remove from oven and mix lemon zest, mint, parsley through cooked potatoes.
  • Place in serving bowl and garnish with crumbled feta cheese in top, sprinkle generously all over & enjoy!
