If you love carrot cake but don’t have time to bake it, these healthy treats are a great alternative

Since the start of the year, online searches for ‘energy ball recipes’ are up 50% on TikTok in Ireland.

TikTok user @doctorbowl has gained over 287.4K views in recent months with her six ingredient Carrot Cake Energy Balls recipe which includes a nutritious mix of oats, grated carrot and peanut butter. Here’s what you need to make them:

Ingredients:

1 large carrot, grated

1 cup oat flour (blitz up oats)

1 cup desiccated coconut

3/4 cup nut butter

2 tablespoons chia seeds

1/3 cup maple syrup

Optional: 100g of white chocolate, melted

Method:

  • In a large bowl mix all the ingredients together (apart from white chocolate)
  • Roll into balls. If too wet slowly add more oat flour, if too dry slowly add more nut butter/sweetener
  • Melt white chocolate, and roll a few of the balls in chocolate.
  • Refrigerate until set
