Try these summer breakfast recipes to kick-start your day

Looking to change up your morning meal? Try these three summer breakfast recipes for a fruity kick

For most of us, porridge provides a warm and creamy bowl of goodness that is perfect for those cold, winter mornings. By the time summer comes around, we’ve given it the breakfast back-seat. Lately, however, overnight oats has become a popular substitute, providing a versatile and nutritious breakfast. Here, the breakfast experts at Flahavan’s share three summer, fruity breakfast recipes that serve up to three people – perfect for preparing in bulk, or sharing with the family.

Tropical overnight oats

Ingredients (serves three)

  • 150g oats
  • 300ml milk
  • Chopped mango and pineapple pieces
  • Unsweetened flaked coconuts
  • 2 tsp honey

Method

  • Place the oats in a large glass jar.
  • Add enough milk to cover the oats.
  • Seal the jar with a lid or cling film and leave in the fridge overnight.
  • Pour the mix into three glasses the next morning, layer with the mango and pineapple pieces, followed by flaked coconut and a drizzle of honey.

Peach cobbler overnight oats

Ingredients (serves two)

  • 120g oats
  • 300g vanilla yoghurt
  • 1 tsp cinnamon
  • 2 fresh peaches cut into pieces
  • 1 tbsp honey
  • 2 tbsp granola

Method

  • Add the oats, yoghurt and cinnamon to a bowl and mix well. If you prefer the consistency of your oats to be thinner, add some milk.
  • Pour the mix into a glass or serving jar and add a layer of chopped peaches, followed by a layer of oat mix.
  • For toppings, add granola, peaches and a drizzle of honey.
  • Seal the jar with a lid or cling film and leave it in the fridge overnight.

Overnight Oats with Coconut, Strawberry and Lime

Ingredients (serves two)

  • 80g oats
  • 1 tbsp chia seeds
  • 2 tbsp desiccated coconut
  • 200ml coconut milk
  • 90g strawberries, sliced
  • 90g raspberries
  • Juice of half a lime
  • 1 tbsp maple syrup

Method

  • Add the oats, chia seeds and desiccated coconut to a bowl and pour in the coconut milk.
  • In a separate bowl mix the strawberries, raspberries, lime juice and maple syrup.
  • Cover both bowls and leave in the fridge overnight.
  • The next day, spoon half the oat mixture into 2 glasses, and layer with half the strawberry mixture.
  • Repeat with a layer of the oat mixture and a layer of the strawberry mixture, until all the ingredients have been used.
  • Pour over any remaining juices, and enjoy.
