Mount Congreve Estate Gardens, Co Waterford
This epic estate is an explosion of colour, as it is home to one of the largest largest collections of rhododendrons, magnolias and camellias. The 100 acre demesne is a picturesque setting, with breathtaking views over the river. There is a brilliant garden shop on site as well as The Dairy café. Plus, the Waterford Greenway is garnering huge attention since its launch and it runs parallel to the gardens.

Pop into the home of Ireland’s Grow It Yourself (GIY) movement for a lunch grown from the garden and lots of inspiration for getting your own vegetable patch started.
Altamont Gardens, Co Carlow
Often described as the most romantic gardens in Ireland, these beautiful gardens, green meadows and stunning rose garden are stunning at the moment. There are 16 hectares of gardens to discover, with a beautiful example of a walled garden and lots of impressive flowers to appease novice and advanced gardeners alike.
Then visit: Thrive Cafe, Tullow
Unprocessed, refined sugar-free and healthy breakfasts and lunches, this gorgeous little café has a wonderful ‘Support Irish’ ethos. Find healthy versions of your favourites, from the chickpea ‘sausage’ roll, to the burrito burger.
Birr Castle, Gardens and Science Centre, Co Offaly
This impressive plant collection features rare species from around the world. The demesne includes formal gardens with old roses, wisteria and the world’s tallest box hedges, some of which are over 300 years old.
Then visit: Woodfield Café, Birr
This lovely café uses food grown by the team at Woodfield garden centre and local growers. Expect healthy salads, creative vegetarian mains and of course lots of sweet treats.
